The first barrel developed at the Tonnellerie Cavin. ‘Ainé” in French, meaning the elder, it combines balance and quality. An alliance of woods from Burgundy and other elegant terroirs in France (such as Burgundy and Central France regions). This barrel accompanies many wineries for more than 12 years now.

Without any surprise, a barrel that allows your wine to develop and take root, is a barrel that comes from high-quality wood and a studied toasting. That is the reason why we select our oak trees in the heart of the best French forests, and cultivate them by drying the staves naturally for 24 months at our park.

Newcomer to the Cavin range, Hélène is in the Greek mythology the most beautiful woman on earth. Her beauty was surpassed only by the goddess Aphrodite. The same is true for this barrel which is a fusion between our classic and exceptional range.

LE SAVOIR-FAIRE

The Hélène barrel is, for one part, made out of the same woods as the Enee barrel, and at the other part like Aphrodite, with fine oaks from Châtillonnais. The natural maturation of the staves for 36 months gives finesse and exceptional aromas to the wines. This ingenious mixture, resulting after many years of reflection and tests, is now ready to be part of the adventure.

Aphrodite

An ode to love. A supreme alliance of winemakers, craftsmen and great oenologists. To us, the ancestral know-how is never-ending, and responds to the specific needs of wine professionals to develop this special barrel. Without compromise, we opt for 100% pure wood from Châtillonnais.

THE KNOW-HOW

The forest of Châtillonnais offers oak trees with extra fine grain. Source, maturing, and assembly are all made in Burgundy. Made by a “Meilleur Ouvrier de France” (craftsmen competition in France, held every four years), the toasting is performed according to the lunar cycles.

Classic Toastings

Light

A short and light toasting, achieved at a low temperature. It respects wine, and is aimed at winemakers looking for a delicate impact of wood. The aromatic impact is very subtle, focusing on freshness and the fruit itself, and lets the original flavors of the wine in as well. 

We advise this toasting for the white wine  if you  look  for a minimal impact of the toasting in order to highlight the fruity taste of your wine.

Medium -

Traditional medium minus toasting uses medium strong flames. This toasting  is more intense than the first one. Nevertheless it still  focuses on the fruit and is characterized by a slightly grilled notes.

We advise the medium minus toasting for your white and red wines for which you wish to highlight the fruit and the Terroir, while bringing light roasted flavors.

Medium

Classical medium toast made with a medium strong flame. It underlines the roundness of the tannins in the wine and respect the fruit. It is recognized by balanced aromas, a good structure and round tannins on the palate.

We advise this toasting for white and red wines, looking for structure and roundness of tannins.

Medium +

Medium Plus toasting with a relatively strong flame. It is adapted to wines with a good structure, and brings a grilled and spicy taste as well as volume and a richness in the mouth. 

We advise the medium Plus toasting for the structured white and red wines, for which you wish to bring the intense flavors of the “bousinage”, in order to balance and offset the “body” of wine.

Strong

Heavy toasting realized with a big strong flame, gives the wine a grilled and woody flavor. It addresses the winemakers who desire a strong impact of the toasting on the wine.

Particularly adapted to heavy and structured wine.

DE Light

The Light Expression Profonde or EP toasting is a ‘blonde’ toasting using small flames. Particularly adapted to the winemakers who search for a subtle impact of woodiness in their wine. The slow and gentle toasting keeps the original flavors of wine and gently brings roundness to the wine in mouth. 

We advise this toasting in particular to the 320L Cigare barrels aimed at varieties such as Sauvignon Blanc or Viogner.

DE Medium -

The Medium Minus Expression Profonde toasting is a lengthy toasting using a small flame. This toasting highlights freshness and maintains the tension of wine. It brings a fine length into the mouth and verticality to wine. It is centered on the terroir and respect of the fruit. 

We advise this toasting for the red wines such as Pinot Noir or white wines with a subtle wooded taste.

DE Medium

The Medium Expression Profonde is a long toasting with small flames at a medium intensity. This toasting highlights the freshness and maintains the tension of wine. It brings a fine length in the mouth and brings verticality to wine. 

We advise this toasting for structured red wines such as Bordeaux Blend or Sangiovese.

DE Medium +

The Medium Plus Expression Profonde toasting is realized using a small flame. It lasts ten minutes longer than the EP toasting. It highlights the structure and strength of your wine, by bringing it to a nice length in the mouth.

This warm-up is suggested for powerful wines.

DE Strong

The Strong Expression Profonde is a long toasting realized using a small flame. It is perfect for structured red wine in which we look for a strong impact of wood. It is characterized by a woody and grilled taste; but also by a strong aromatic impact and a nice strength in the mouth. 

This toasting is suggested for structured wine with a significant impact of wood.
