The Toasting.

Traditionally, it’s during this delicate step that the cooper puts their own signature. The “bousinage” depends on a certain style, and sublimates all of the choice previously made. The winemaker is the guide to this crucial process. The fire doesn’t burn but cooks the wood: There’s no miracle recipe, so every toasting is different. It allows the organoleptic qualities of the wood to reveal and sublimate themselves. The “bousinage” intensifies  the quality of what it offers (structure, volume, sweetness). Our toastings last between 45 and 90 minutes, whether it is a Classique or Expression Profonde process. Every type of toasting can be translated into various intensities. At the Tonnellerie Cavin, this step is always made while respecting the traditions.
